Olive Oil Production and Trade in Greece and Western Greece from the Archaic to the Classical Period

Focusing on the needs and uses of olive oil in the Archaic and Classical periods, this talk will consider the production and circulation of oil, in relation both to the dynamics of the Greek foundations in the West and to the temporalities (cultivation, processing, conservation) specific to this precious material. After examining the various aspects and spheres of consumption of oil in Archaic and classical societies, as well as the technical know-how required for olive growing, the final section will address the question of the possible relationships between the oil trade and Greek settlements in the West, on the basis of historical and archaeological evidence.
